Tortillas
This morning I woke up with the sudden urge to make tortillas. There are many recipes for tortillas however the best ones require kneading and time to rise and I want breakfast now not in 3 hours. After some searching I found a recipe that made a batter instead of dough and I figured I'd give it a try.
I started off by mixing the flour, olive oil, water, and salt and mixing it thoroughly. After mixing it seemed to be pretty thick still so I added some more water and poured it into a buttered pan. This first one has more of a pancake shape rather than tortilla. I added more water and tried again and did not butter the pan first. I tried to shape it by turning the pan but it got thick. With more trial and error I had it dialed in at about the fourth one. I did not butter the pan and left it on a pretty low heat. Immediately after pouring the batter I used the back of a spoon to spread the batter out in a spiral shape until it was as spread out as possible.
Once the time felt right I carefully flipped the tortilla over and I let it sit on the other side until all battery-looking parts looked cooked. The end result was chewy and flexible and honestly fantastic. My husband tried them and told me that he never wants me to buy tortillas ever again and that I should always make these instead. You could also play with how much butter you add to make them more of a fried texture or how long you leave them in the pan for a more or less doughey texture.
This recipe made about 6-7 medium tortillas. It was the perfect amount for a few breakfast burritos for my husband and I and we also spread butter and jam on them because I didn't make enough sausage. This ended up a 10/10 breakfast. In the future I will definitely act on every impulse for whatever random recipe I want to try because this was amazing and so fun!
