Pumpkin Chocolate Chip Cookies

 
  Some of my favorite things include fall, baking, pumpkin, and bringing the things I bake to other people or events. Luckily, I have plenty of events to bake for and it is the peak time for baking with pumpkin. So, of course, when I got asked to help out with an event at one of my jobs I HAD to make pumpkin chocolate chip cookies. 
     I have seen these made differently so many times. They can be gooey, fluffy, crispy, or other. I found this recipe on Pinterest and I was immediately intrigued. The picture made them look nice and thick and the event I was baking for didn't have too many people attending so I thought some big cookies would be better. 
   Once I preheated the oven and prepared the cookie sheet with parchment paper I got going on the cookie dough. I first mixed the dry ingredients. Then I mixed in the egg and oil before I slowly incorporated the can of pumpkin. Once everything was well combined I mixed in the chocolate chips. I thought the batter was a little thin for a cookie dough but the recipe said it was fine so I didn't question it. I probably could've mixed the batter more or even chilled it for a while but I didn't question it and I went ahead and used a scooper to place each cookie lump about 1 in apart. I then baked them for about 13 min. 
    Once I pulled them out of the oven I was shocked with how fluffy they were. It was almost like eating chocolate chip pumpkin bread but in a cookie shape. it was a huge hit and I will definitely be making these again. Seriously, I have never had cookies this texture before and it was fantastic. I know I said this was for an event but I couldn't help but make myself a pumpkin spice latte, light a candle, and eat a cookie or two while I rewatch Friends. I love fall!!!
