The Best Caramel Corn Ever!


     I make a lot of popcorn. It is a really easy thing to whip out real quick on the stove, using cheap ingredients, to serve to a large group of people. It truly is one of the best foods to make homemade for a gathering. However, when I looked online I had trouble finding a caramel corn recipe that met all of my needs. 

    My checklist for a perfect caramel corn recipe included no need for baking after the popcorn kernels and caramel are combined, no to very little corn syrup, and a crispy texture over a gooey one. I searched online for a recipe that I could later modify for different flavors but I couldn't find one that checked all of my boxes. So I decided to write down a few recipes that were close and then combine them. 

    I started off by melting butter, then mixing in brown sugar, and a little bit of corn syrup. Once everything was mixed well and bubbling, I took the caramel off the heat. I waited until the bubbles stopped then added my baking soda and vanilla. I mixed until the bubbles stooped a second time, then I poured the caramel over my popcorn and I mixed until everything was evenly coated. 


    At this point I wasn't sure if I was going to need to bake it for a little while or not so I let it cool for a little while. To my relief, when it cooled it was the perfect amount of crispy and soft. 


    This is now the base I use for all of my popcorn recipes. From here I just add things or modify proportions as needed! Its so yummy and you can't fail.
