Chocolate chip biscotti



    My husband goes gaga over a plain old chocolate chip cookie. This sometimes drives me crazy because I don't often want to make a plain old chocolate chip cookie, I'm way too extra for that. So, when all he wants is a chocolate chip cookie but I need something a little more challenging, this is one of the recipes I bust out. The perfect compromise that blends the classic with something more complex. 

    To start making my biscotti, I first preheat my oven so that it is ready to go by the time I'm done mixing my ingredients. Then, I get my stand mixer and beat together my butter and sugar. You can also use a hand mixer or a good old bowl and spatula but I like to use just about any excuse humanly possible to use my stand mixer. When my butter and sugar are smooth, I add in my eggs one at a time and mix again with a little bit of vanilla until it's all smooth. After that, I add in my flour, salt, baking powder, and chocolate chips and mix on the lowest setting or by hand just until there are no more really dry spots.  I then dump my bowl out onto a parchment lined baking sheet and shape my dough into two equal sized logs. Those logs then go into the oven for 30-35 minutes until they are baked all the way through. 

    Once my logs are done baking, I pull them out of the oven and let them cool until I can handle them easily. This takes at least 30 minutes, sometimes longer. After the 30+ minutes of cooling, I cut the logs up into slices and lay each slice on their side on the baking sheet and throw them into the oven for another 30 minutes at 300 degrees Fahrenheit. When you are cutting up your biscotti you might notice that the middles of your logs are a little soft. That is exactly how they are supposed to be. As long as they have a solid outside crust you are doing great. This second bake will cause them to crisp up the rest of the way to make the crunchy biscotti we all know and love. 

    When the second bake is done, I let my biscotti cool to room temperature before eating or storing. However, you can definitely eat these warm if your self control won't let you wait that long. These are perfect with a cup of tea, milk, coffee, or whatever else you like to dunk a cookie in. My husband and I also like to eat these by themselves after we put our daughter to bed as a late night treat. The great part about these is they keep a really long time in a cookie jar without getting super hard or stale, so they make the perfect grab and go treat that lasts all week!
