Chocolate Covered Strawberry Scones

     The core of Valentine's Day isn't love, friendship, flowers, or chocolate, it's chocolate covered strawberries. Ok, maybe some things are more important on Valentine's Day, but not by much. In my opinion Valentine's Day isn't truly complete without chocolate covered strawberries. The thing is, sometimes they need a little sprucing up. After my 50th strawberry I am sad to admit that I start to look for a little variation. This is one way I love to insert one of the best parts of this holiday into my breakfast, or snack, or dessert. The nice thing is, they whip together in about 30 minutes and are hard to mess up!

    To make these, I start by preheating the oven so that when the scones are all mixed and shaped they can go straight into the oven. I start the dough by mixing together all of my dry ingredients. This is my flour, sugar, baking powder, and salt. Then, I take my butter out of the fridge and roughly cut it into my dry ingredients but I make sure to leave quite a few butter chunks. From this point on, I work pretty fast so that the butter doesn't fully incorporate before I bake them.

    I fold in the milk, vanilla, egg, strawberries, and chocolate chips. Once everything is mostly mixed, I dump the dough out onto a lightly floured surface and shape either into a rectangle or a circle depending on how many scones I want. If I want less I shape the dough into a circle and cut it up like a pizza. However, if I want a couple more, I shape it into a rectangle and cut the scones into squares.

    Once everything is shaped, I space each scone about one inch apart on a lined baking sheet and bake for 20-25 minutes or until the edges are golden brown. When they are done baking, I pull them out of the oven and let them cool all the way. As they reach room temperature I melt a few extra chocolate chips and drizzle them on all of the scones for a little extra fanciness. Not to mention, these are supposed to be inspired by chocolate covered strawberries so they should probably be at least partially covered in chocolate.

    After the first time making these, they quickly became one of my favorite flavors of scones. I very much will be craving these year round, not only for Valentine's Day. However, the pop of pink in these scones along with the chocolate chips and drizzle make the perfect breakfast or treat for your day of love.
