Sugar Cookie Drink Syrup

Sugar cookie coffee drinks are something I didn't really get into until this year. I always thought that it was just a vanilla latte with sprinkles on top. That was until I finally broke down and ordered one at my favorite coffee shop and decided this was a recipe I needed to figure out!

Most sugar cookie syrups consist of a bunch of extracts. However, I don't usually keep a ton of those on hand and I like my flavors to be as authentic they can be as long as it's still reasonable. One of these flavors is butter flavor. I refuse to buy that extract, so, to make this syrup I start by browning some butter. This is what really gives it a cookie flavor. Once my butter is browned, I mix in my sugar, water, vanilla, and almond extract. The almond is optional but it adds a little depth of flavor that doesn't make sense in my brain but at the same time I feel is very necessary. Side note; yes I realize there are still extracts in this but you can replace the vanilla extract with paste or beans if you're bougie, I am not. Also, I don't know any other way to get the almond flavor in there without an extract other than boiling nuts and I'm not about to do that. Deal with it.

Once all your ingredients are mixed, simmer it until the sugar is dissolved and your syrup is slightly thick, remember it will thicken up more when it cools. Make sure you shake your syrup before using it because it can separate a little. To make a sugar cookie latte all you have to do is mix one tablespoon of your homemade syrup with some hot or cold milk and espresso! You can also use it in place of storebought creamer by pouring one tablespoon of syrup and some half and half straight into your plain black coffee.
