Cherry Almond Kombucha
As someone who is always looking for new kombucha flavors to try, I was scouring Pinterest for something new and interesting. That is when I found out that cherry and almond was supposed to taste like Dr. Pepper. Out of curiosity I definitely had to try! Although I wouldn't say it tastes like Dr. Pepper, I would say that the combo is still amazingly delicious!
I start by putting my plain kombucha into sterilized flip top bottles, leaving about 2 inches head room so there is enough room for the flavor and still have about 1 inch headspace when all is said and done. I use two 16 oz bottles for 32 oz of kombucha total but you can use up to four for 64 oz total. The size of bottles you use is also totally up to you! I just don't recommend you use less than 32 oz or more than 64 oz for the amount of flavor this recipe makes. If you want to use less you can half the recipe or for more you can double it.
For the flavor, I take either frozen or fresh cherries and pit them, chop them into halves or quarters, and put them in a bowl until I have about 1 cup. Then, I add in 2 teaspoons of almond extract and about 2 tbsp sugar. I use a fork to mash everything together. This helps the sugar real incorporate itself. Once the sugar is dissolved into the cherry juices, I split it between all of my bottles evenly.
When I have my flavor and kombucha in all of my bottles I wipe of the lip and seal them. After a gentle shake to mix everything, I leave my bottles on the counter, out of direct sunlight, for 2-7 days. I burp my bottles to check the level of carbonation after 2 and 5 days. Once they are carbonated enough I put them in the fridge to stop carbonation for at least a day.
After a day in the fridge, the kombucha is ready to drink! Pour it through a strainer or just straight into a cup over ice and enjoy! The cherry almond combo offers an interesting tart, but rich and sweet flavor that has a ton of depth! Definitely one of my favorites!
