Dandelion Drink Syrup
Cherry is out the window and dandelion is in! If you think my flavor obsessions change quick I would agree with you... but that only allows me to try so many new things. So, I'm to going to change that any time soon! Anyway, with my newest obsession, like every other, I knew I had to figure out how to incorporate it into a coffee. However, like many of my other syrups, this would also be tasty in an italian soda or a mixed drink, so I don't limit it to only coffee.
The main difficulty with making anything from dandelions is cleaning them, especially the flours. So, All I do is fill my dandelion bowl with scalding hot water to kill any bugs that might be hiding in there and let it sit for a bit. After a few minutes I use a strainer to get all the water and small bugs out before I rinse the flowers a few more times. With this recipe, I will be boiling meh flowers to extract all of the flavor, so anything that isn't removed at this point will be killed that way.
I put about two cups of flowers into a small saucepan with about two cups of water. You can use the entire crown for this recipe or just the petals. The only difference in the end is the syrup will be greener with the whole crown and yellower with the petals only. I like to take the easier route usually so I like to use the whole thing. With everything in my pot I bring it to a roiling boil and let go for about 5 minutes. This will kill any germs on my flowers and also soften everything up so that the flavor is released quicker.
After five minutes, I add in my sugar and let it simmer. I stir everything periodically until the sugar is dissolved. At this point, the liquid should start to have a yellowish tint and the flowers should be pretty shriveled. I let the syrup simmer for a bit longer to let it thicken up before I take it off of the heat and let it cool entirely.
Once it is cool, I pour my syrup through a very fine strainer and into a sealable container. The final result is great in a coffee, latte, cold foam, italian soda, mixed drinks, and, if you thicken it up on the stove for a bit longer, can even be used on pancakes!! It has a floral flavor slightly reminiscent of honey that is to die for. Although we did boil the crap out of the flours and also added a ton of sugar, you can still reap some of the benefits of this amazing weed! (read more about the benefits of dandelion here ).
