Dandelion Flower Fritters
I recently discovered the many health benefits of dandelion. In fact, I wrote a whole post about it (read it here!) Because of these many benefits, I have been trying to figure out more ways to include them into my diet. Sure, I could probably just eat them plain, but I think they need just a little help in the flavor category in order to reach their full potential! One of these new recipes I have made, are dandelion flower fritters!
Very similar to pancakes, these flower fritters consist of a slightly thick batter that is spooned onto a hot, buttered, pan, and cooked! Simple as that! I like to start my batter by beating together my eg, milk, and honey. After that, I mix in my flour, baking powder, and dandelion petals. You can include the entire top of the dandelion but then you tend to get big dandelion chunks rather than the dandelion dispersed throughout the entire fritter. The best way to just get the petals is to pinch the crown on the green part where there is almost a "ruffle" and twist off all of the petals in one go. If you get some of the green "petals" that's all good! They taste the same as the petals and offer a little more color to your fritters.
To fry them, I melt plenty of butter in my pan, and then just scoop spoonfuls of batter into it and cook them on medium heat. You have to be careful because the butter is easy to burn but its no biggie if it is a little burnt, the fritters are still super tasty! I like to eat my fritters warm with a little whipped cream and maple syrup but they're also great plain or with butter!
