Cilantro Lime Shrimp tacos
Shrimp can be done a million different ways and according to my husband none of them are wrong. I don't know if I totally agree with him on that but something I do know is that this way is in my top five favorites. I love the way the summery flavors blend, it makes me feel like summer will never end! I also love how the entire meal comes together in about 10-20 minutes with minimal dishes (a summer supper necessity).
I start my tacos by starting my butter lime shrimp. All I have to do is throw shrimp, butter, lime (zest and juice) garlic, salt, pepper, cumin, and paprika into a pan and stir it periodically until my shrimps are pink. You can add cilantro into your pan too but there will be enough of that in other parts of my dish that it is not needed!
While my shrimp is cooking, I assemble my creamy cilantro lime sauce. This is one of my favorite sauces to make because it takes one dish, one step, and has insanely tasty results. Just dump everything into a mason jar and shake it! Thats it! The result is a super tasty and creamy sauce to perfectly compliment any taco and especially our butter lime shrimp.
The final thing that needs to be prepared for the shrimp tacos is the coleslaw. The easiest way is to cut up half of a purple onion, half a cabbage, one carrot and 1/4 of a purple cabbage and toss it all in the cilantro lime sauce you just made. However, I like to make my coleslaw separately so that I can drizzle the sauce on top or dip my taco in it. Without using my cilantro lime sauce, I toss my veggies in olive oil, cilantro, lime, honey, and a bit of sour cream. This slaw is less creamy and adds more of a fresh touch to the tacos.Once everything is prepared, you are ready to assemble the tacos! I like to assemble them with the slaw on the bottom, then the shrimp, topped with the sauce and some cotija cheese or feta if I can't find cotija. The result os these amazing Mexican inspired tacos that just feel so fresh and summery! Perfect for cinco de mayo or just a summer evening!
