Pistachio Drink Syrup

When we go to coffee shop, there are a few drink flavors that my husband is guaranteed to order. One of those flavors is pistachio! His favorite is a blended pistachio latte from a small place in a neighboring town. The problem is its super expensive and we dot go to that neighboring town very often. So, of course, I had to learn how to make pistachio drink syrup so I can make his favorite drink at home! There are a few ways you can start this syrup. You can either start by placing your pistachios in boiling water for about a minute then quickly removing them and drying them off with a paper towel. While they are drying, peel off all of the brown bits from the nuts. The only difference this makes to your final syrup is it will be more green and less brown looking. I find this step to be a lot of extra effort so I usually skip it.
How I usually start my syrup, is chopping up my roasted pistachios. You can use a food processor for this but I tend to use a good old knife and cutting board. Once I have about 1 cup of chopped pistachios, I toss them into my small saucepan with sugar and water. I turn the heat to about medium and let it simmer for 8-10 minutes. By then the syrup will have thickened up and turned color. I take it off of the heat and let it cool.
When it has cooled to about room temperature, I pour the syrup through the strainer to catch all the pistachios and into a sealable container. This syrup will last in a sealed container on the counter for about a week but it will last up to a month in the refrigerator.
This syrup wonderfully captures the pistachio flavor with an amazing sweetness! My husband approves and I will be making this now every time I get my hands on some pistachios! I like to use 1-2 tbsp of this syrup with 2 shots of espresso and about 1 cup of milk overt ice to make a simple iced latte. If you take that and toss it in a blender for a bit it makes an amazing pistachio blended latte. You can even use the leftover pistachio as a topping with whipped cream!
Another amazing drink I like to make with this syrup is a Dubai chocolate latte. I use 2 shots of Seven Weeks Coffee espresso and mix it with about 1 tablespoon of pistachio syrup and a half of a tablespoon of homemade chocolate syrup and some milk. I like a warm latte so I use steamed milk but you can also pour it over ice and use cold milk.
